I'm having a problem with my putting stroke. My question is how will you know which stroke to use? and which is better?

It depends, because the arc stroke should be more of a natural feeling. If it isn't then you might be over doing it.
Practice it first then try to determine if you are more comfortable with arc or straight.

The putting stroke that is best basically depends upon the individual. So I would suggest you try them all and decide which one is best for you.
